Vegan Veggie Pesto Pasta

This Pesto Pasta is perfect for a quick and super easy weeknight dinner. Sometimes you just do not have the time or the energy to create a feast at the end f the day. You do not have to sacrifice flavor on these days though! Keep it super simple and easy.

You will not need any fancy kitchen gadgets or skills for this recipe, enjoy!

Pesto Pasta Ingredients

You will need:

-Pasta, 1 box

-Cherry tomatoes, 1 pint

-Edamame, frozen, 1 cup

-Peas, frozen, 1 cup

-Vegan Pesto, 1 8 oz jar

How to Make Pesto Pasta

You will only need one pot for this. Start by cooking your pasta according to the package directions. While the pasta cooks, slice the cherry tomatoes in halves.

When the pasta is done cooking, reserve about a cup of the liquid. Drain pasta in a strainer.

Add the edamame, peas, and reserved pasta liquid to the pot and cook for about five minutes or until cooked through. If there is a lot of liquid remaining, strain to remove.

Now return the pasta, edamame, and peas to the pot and stir in the pesto. Remove from heat and add the tomatoes.

There you have it, fast and easy Pesto Pasta!

Optional Pesto Pasta Toppings: Sprig of basil, breadcrumbs, or garlic toast.
