Valentine’s Day Vegan Jello-Shots
I am always looking for new ways to entertain people and I remembered one time in college when I made Jello shots that turned out really good. That time I had soaked Jolly Ranchers in Vodka and then made Jello-shots with that and you could not taste any alcohol only sweetness. I decided to try to make a vegan version of a Jello shot for Valentine’s Day because it is something I have never heard of anyone doing.
Why use vegan gelatin?
Regular gelatin is made from boiling animal tissue and bones until they cook down to make a gel texture. I am not going to go any more in depth than that because that seems like reason enough to me to not use regular gelatin.
Vegan gelatin uses carrageenan which is a thickener made from seaweed. There is a lot of information out there about carrageen being bad for you. For the purposes of making Jello shots I decided it was better than dead animal tissue and bones. Let’s be honest, nobody thought Jello-shots were a health food anyway and I am not planning to have these every single day for every meal.
This was my first time using vegan gelatin and I was surprised in two ways. Firstly, it thickens really fast as you are stirring it and secondly it really is not noticeably different once it has set.
I used the Jel Dessert raspberry flavor for this recipe, but they have a range of different flavors and an unsweetened unflavored version too.
You will need…
These Jello-shots only require three ingredients! Alcohol. Gelatin. Water. Simple is always better.
How to make…
You will need a mold of some sort or a container. Use fun molds with a theme in mind like my hearts/roses for Valentine’s Day or just make a large pan and cut them into single portions later. This is a very fast process so I recommend having everything ready to go before mixing anything.
First mix together 1 cup of boiling water with the gelatin packet until all the clumps are gone. This only takes a minute or two.
Next, add in 1/2 a cup of cold water as well as 1/2 cup of alcohol. I used raspberry vodka. Stir this together and it will already start to set and thicken.
Now pour the Jello-shot mixture into the molds and put it straight into the fridge to set. Leave it in there for at least four hours or overnight.
Both these molds are really cheap. The heart molds can be found in a Valentine’s seasonal section of the grocery store for three dollars. The silicone molds can be found <<here>>. They are add a lot of fun to all kinds of recipes and they have certainly gotten a lot of use out of me. I used them for my White Chocolate Crunch Bars and they are so much better than wasting paper for muffin or cupcake recipes.
The Recipe: Jello-shots

- Mix 1 cup boiling water with gelatin packet until dissolved.
