TLT’s: Tofu Lettuce Tomato Sandwiches

This TLT (tofu lettuce tomato) sandwich is great for packed lunches! 

Once I went vegan, I started to bring my own lunches to work with me. I worked at a restaurant so you would think it would be easy to heat things up but it was always a dramatic hoopla. So I started eating my lunch cold. Thankfully I have quit that job. Now I have a whole kitchen to myself at lunchtime and it is fantastic. 

For the rest of this year my husband will be packing lunches that cannot be heated up. So I am back to looking for good lunches that can last in a lunch box all morning and be eaten cold.


There are quite a bit of spices in this marinade but do not let that scare you it is still very easy. You will need one teaspoon of salt, chili powder, paprika, garlic powder, onion powder, and rice vinegar. Half a teaspoon of pepper. One quarter cup of soy sauce and maple syrup.

If you like a smokey flavor you can substitute the chili powder for chipotle powder and the paprika for smoked paprika. I personally can’t stand smokey flavored anything but as this is a twist on a classic BLT you may want to keep it smokey.

Lettuce and Tomato

You can keep this super simple and just do the lettuce and tomato, or you can get creative and add other toppings. Hummus or a non-dairy cheese spread are great options to put on your bread slices especially if your bread is on the drier side. 

Layer the Sandwich with Extras

Really this is however you want your TLT to be. Slice the tomato and get sandwich sized pieces of lettuce. I added some Treeline vegan cheese spread to my bread and my husband added some hummus. Extra veggies would really good in addition. Sprouts would be so delicious.

How to Make

Once you have let the tofu sit in the marinade, you can begin cooking it. Heat a little oil over medium heat in a sauce pan. When hot add tofu in a single layer with additional marinade. Cook on each side for three to four minutes or until crispy.

When it is done, you can place the cooked tofu on a cheesecloth or a paper towel to drain the excess oil.

Now you can assemble your sandwich in whichever order pleases you and you are done. Go enjoy your TLT Sandwich.
