Get your vegan comfort food fix with these loaded fries
Who doesn’t love cheese sauce and fries? Fries are life. They are almost as important as coffee to me. This is one of the things I miss from my pre-vegan days. I loved going to get a beer and some crappy food to go along with it. So it was about time I make some vegan loaded fries and share them with the world.
What you will need
Firstly start with some crispy fries. Add on some cheese sauce. Then get your toppings. I went with grilled up corn kernels, jalapeños, spicy beans, avocado, green onions, and salsa.
You can grill up the corn on high heat in a skillet without any oil. I season mine with a little bit of pepper.
Note that for the cheese sauce you will need cashews, salsa, nooch (Nutritional yeast), cumin, and salt.
How to make it
This is cheese sauce is not my recipe. It is my favorite cheese sauce of all the many different vegan sauces I have made. It is certainly worth giving a try.
Bake the fries until they are crispy. And then you can begin assembling. I layered fries, cheese, black beans, corn, tomatoes, jalapeños, green onion, and lastly avocado.
Alternatively or in addition to this cheese sauce, try crumbling some almond cheese over the top of these loaded up fries.
If you have leftovers of all the toppings, they go really well inside of quesadillas. I had two of these myself.
